The menu for the dinner hosted by Australian Prime Minister Julia Gillard in honor of President Barack Obama's visit included:
- Starter: Macadamia and thyme encrusted lamb cannon, served with avocado cream quenelle, blood-orange segments and herb salad.
- Main course: Pan-fried jewfish with seared prawn mouss, crushed kipfler potato and saffron cream reduction.
- Dessert: Wattleseed and passionfruit pavlova roulade with fresh raspberries.
The dishes were pared with a 2011 Voyager Estate Sauvignon Blanc Semillon 2011 from Margaret River and a 2009 Hollick Cabernet Sauvignon from Coonawarra.
Notes:
Lamb cannon is a relatively new cut of meat, it is the eye of the loin or rack with all the fat and sinew removed.
A quenelle is mixture of creamed fish, chicken, meat, or vegetables sometimes combined with breadcrumbs, with a light egg binding.
Jewfish is the informal name for the West Australian dhulfish and is highly praised for its taste.
Kipfler potatos are German in orgin and are known for their elongated cream flesh. They are popular in salads.
Wattleseed is an indigenous Australian spice that has a rich, nutty taste.
